Description

Quinoa and bean salad is a true vitamin bomb. Quinoa is one of the healthiest and most valuable cereal crops for us. It not only has perfect nutrition (full of vitamins, good fat, protein, carbs, amino acids, minerals) but also tastes great. I don’t know why, but it reminds me of meat or buckwheat. Even though I found these groats not long ago, I use them the most out of all the cereal crops.

Ingredients

  • ½ cups Quinoa
  • 1 cup Water
  • ½ cups Cooked Black Beans
  • ½ cups Cherry Tomatoes
  • 3  Spring Onions, Chopped
  • Salad Microgreens, For Garnish
  • FOR THE DRESSING:
  • 3 Tablespoons Olive Oil
  • ½  Lime, Juiced
  • 1 Tablespoon Grated Caraway
  • Salt And Pepper, to taste
  • 1 pinch Chili Flakes

Preparation

Cook quinoa in water according to package instructions or boil for 15 minutes. Remove from heat, fluff, and let cool.

In another dish, dressing ingredients.

In an empty bowl, pour quinoa, cooked beans, tomatoes and chopped spring onions. Pour dressing over and mix. Decorate salad with greens.
