Purple kale, oranges, feta cheese and olives topped with pomegranate vinaigrette.
Remove the spine from the kale and slice the kale into thin pieces. Toss in a bowl with the rest of the salad ingredients.
In a small bowl combine all of the vinaigrette ingredients except for the oil. Stir until the honey is dissolved. While stirring add the olive oil. Continue to stir until it’s combined (you can do this in the blender as well).
Toss dressing into the salad and enjoy!
