Description

A great summer time potato salad that gets a twist with the addition of garlic, dill, and a bit of cilantro. This salad is sure to please your taste buds.

Ingredients

  • 20 whole Small Red Potatoes, Cleaned, And Boiled Until Fork Tender
  • 2 cloves Garlic, Minced
  • 1 Tablespoon Cilantro Leaves, Chopped
  • 2 Tablespoons Fresh Dill, Chopped
  • 3 Tablespoons Mayonnaise
  • 1 pinch Salt
  • 1 pinch Cracked Black Pepper
  • 1 whole Green Onion, Thinly Sliced

Preparation

Start by bringing a large pot of water to the stove. Add in the potatoes, whole, and bring to a medium-high heat. During this time, add the remaining ingredients to a mixing bowl.

When the potatoes are fork-tender, remove them with a slotted spoon or cooking spider and add them directly to the mixing bowl. Once they are all added, gently toss to cover each of the potatoes. Plate in a nice serving bowl and dig in.

The end result is a thing of beauty. You get these super tender potatoes that are coated with an amazing dressing. When cutting into them, or forking for that matter, you get the great flavor on the exterior while the interior remains soft and creamy. It’s a perfect balance to end any summertime meal. I am making this for the fourth time tonight so it’s time to tell you WE LOVE IT! It’s very pretty in the bowl as well. I serve it warm as a side dish with beef, chicken, or fish and am never disappointed.

Ridiculously delicious! We were licking the bowl clean. Served lukewarm, these are definitly a must try. I did cut my potatoes in half after cooking to let them absorb some of the goodness. Many thanks for this yum-yum dish!
