Description

This pasta salad is so light and fresh and it’s a cinch to throw together anytime of the year!

Ingredients

  • 1 package (10 Oz. Size) Frozen Cheese Tortelinni
  • 1 jar (6.5 Oz. Size) Pesto With Basil (or You Can Use Homemade)
  • 1 cup Grape Tomatoes
  • 1 jar (6.5 Oz. Size) Marinated Artichoke Hearts
  • 6 ounces, weight Fresh Mozzarella Cheese, Cubed

Preparation

Cook the tortellini as directed on package. Then drain it and let it cool for 5-10 minutes.

Combine all the ingredients together in a large bowl and toss till everything is well coated with pesto. Cover and chill for an hour or two before serving to allow the flavors to marry together. Salad will keep in the refrigerator for up to 3 days.
