A fabulously easy and classic pasta dish. Just five ingrediants!
Prepare pasta according to package directions. Drain, and allow to cool.
Meanwhile, toast the pine nuts in a dry skillet over medium heat until slightly golden. You’re just trying to release some oils and flavor.
Pour pasta into a large bowl. Mix pasta together with the pesto, sliced sun-dried tomatoes, pine nuts, and smoked mozzarella. Season with salt and pepper to taste.
Serve at room temperature, or chilled.
