A light, summery pasta salad with homemade pesto, fresh tomatoes and mozzarella.
Cook pasta according to package instructions for al dente, about 10 minutes. Drain pasta and add it into a large bowl. Drizzle with olive oil, to prevent sticking. Set aside.
In a food processor, add basil, garlic and Parmesan cheese. On low speed, drizzle in the olive oil and process until combined. Pour over cooked pasta and mix until thoroughly combined.
Add tomatoes and cheese to pasta and season with salt if desired. Refrigerate until ready to serve.
