A green salad tossed with slices of pear, unripened goat cheese and a tangy orange vinaigrette.
1. Wash and spin dry the lettuce, and tear into pieces in a large bowl.
2. Squeeze the juice from the orange.
3. Make the dressing by whisking together the orange juice, olive oil, balsamic vinegar, and add salt and pepper to taste. Set aside.
4. Crumble the goat cheese into the salad bowl with the lettuce.
5. Leaving the skin on, slice the pear in half and remove the core. Cut the pear into thin slices, and add to the salad bowl.
6. Add the pine nuts to the salad bowl.
7. Gently toss the salad with the dressing, using only as much dressing as you think is necessary. You may have extra dressing. The goat cheese will meld slightly with the dressing, making it nice and creamy.
