Description

This quick side is the perfect complement to any grilled meal.

Ingredients

  • 4 ounces, weight Orzo Pasta
  • 1  Large Roma Tomato Or 2 Small Ones
  • 1 Tablespoon Fresh Basil, Chopped
  • 2 Tablespoons Fresh Parsley, Chopped
  • ⅛ teaspoons Black Pepper
  • ¼ cups Plus 2 Tablespoons Reduced Fat Feta Cheese
  • Balsamic Vinegar For Drizzling

Preparation

Boil the orzo until al dente. While it is cooking, chop your tomato and herbs.

When the pasta is done, drain it and let it cool for several minutes. Then toss the remaining ingredients sans balsamic vinegar in a large bowl.

When you are ready to serve the salad, drizzle balsamic vinegar over the top.
