This is a recipe that my Italian grandmother developed out of necessity, living on a ranch and having what seemed like an endless supply of oranges and avocados. The natural solution was to mix them together with some onions from the garden! This is a super easy recipe that is a savory alternative to the traditional salad, and my husband’s favorite.
To create the dressing for this salad, mix the olive oil and vinegar (3 parts oil to 1 part vinegar) and salt and pepper to taste. Whisk in a small bowl (this is a great staple to have in the fridge for salads, so make extra and put it in a jar).
Slice the avocados, oranges and red onions and layer on a dish or individual plates. Sprinkle with salt and pepper to taste and drizzle with dressing and voila! A simple, delicious salad that will surely be a hit!
