Description

Protein-packed power salad, great for the summertime!

Ingredients

  • FOR THE DRESSING:
  • ¼ cups Red Wine Vinegar
  • 2 cloves Garlic
  • ¼ cups Fresh Basil Leaves, Packed
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • ½ cups Olive Oil
  • FOR THE SALAD:
  • 1 cup Uncooked Quinoa
  • 1 cup Heirloom Tomatoes, Halved
  • 1 can (14 Oz. Size) Cooked Black Beans, Rinsed
  • ½ cups Kalamata Olives, Pitted
  • 2-½ Tablespoons Green Onion, Sliced Thinly
  • ½  Avocado, Cut Into Small Squares
  • 2 cups Micro Greens

Preparation

For the dressing:
Combine the red wine vinegar, garlic, basil, salt and pepper in a food processor. Pulse on high speed while adding the oil in a slow stream until emulsified. Set aside in the fridge until ready to use.

For the salad:
Cook the quinoa as per the instructions on the pack. Once it’s ready, let it cool. When cool, add the rest of the salad ingredients.

Add 2 tablespoons of dressing to the mixture and toss gently. Add more dressing if preferred.

Place on plates and serve at once, or store in the fridge until ready to use.

I made this salad today for lunch with my son and we LOVED it!! The combination of flavors is incredibly good. I made the entire recipe and we ate almost all of it. Maybe there’s just enough for me to have some tonight. Thank you so much. I’ve been making every quinoa recipe I could find and this is the best yet!

I also double the recipe and eat it for lunch all week. I only used half of the oil, substituted chopped spinach for the micro greens, and added a little grilled chicken breast. Super delicious! Feta would be great with it.

Anyone can cook two cups of quinoa and throw in beans, right? But not everyone can come up with the dressing and other ingredients that make it sing, dance, and make the diner want to to so as well. Delicious!!!
