Mediterranean Pasta Salad

Description
A super simple pasta salad with the flavors of the Mediterranean.
Ingredients
- 2 cups Veggie Rotini Pasta (such As Wacky Mac Brand)
- ¼ cups Thinly Sliced Red Onions
- 6 whole Piquante Peppers, Thinly Sliced
- 10 whole Kalamata Olives, Thinly Sliced
- 2 Tablespoons Extra Virgin Olive Oil
- 1-½ Tablespoon Fresh Lemon Juice (From About 1 Small Juicy Lemon)
- 1 dash Salt
- 4 Tablespoons Crumbled Feta Cheese
Preparation
Cook the pasta according to package directions. Drain and rinse under cold water. Place pasta in a large bowl. Add the rest of the ingredients and toss to combine. Top with crumbled feta cheese. Serve at room temperature or cold.
