A bright, crunchy salad that’s packed with fiber, protein and essential nutrients. The perfect spring/summer side dish or light meal.
In a small bowl combine all of the ingredients for the dressing. Let the mixture stand for at least 10 minutes.
In a large mixing bowl, combine all of the vegetables and the chickpeas. Add the dressing and gently toss to coat. Refrigerate for at least 20 minutes for the flavors to combine. Serve chilled or at room temperature.
