This Mediterranean chickpea salad is a fantastic option if you want to try something new and delicious that can provide you with great nutrition in a light yet satisfying meal.
Rinse and drain chickpeas and set aside.
Mix tomatoes, cucumbers and scallions in a small bowl. Squeeze lemon juice on the veggies. Pour veggies over chickpeas.
Sprinkle salad with feta cheese, mint, salt and pepper. Mix lightly. Pour olive oil over salad and serve.
Keep refrigerated up to 4–5 days.
