This super green salad with mackerel is full of flavour, with a buttery, earthy taste. Even better, it’s packed with vitamin C and fibre!
Place a saucepan of boiling water over medium heat. Add eggs and leave for 3 minutes. Then add sugar snap peas and green beans to the water and cook for another 3 minutes.
Remove eggs and briefly run under cold water. Drain green beans and sugar snap peas.
In a large salad bowl, add salad leaves, green beans, sugar snap peas, garden peas, avocado, mackerel, lemon juice, and pepper. Give the salad a good mix, then peel eggs and quarter them over the salad, so that the yolk runs over it. Add the egg white to the salad and y’re ready to serve!
