Description

Yum, yum, yum! A great colourful dish to bring to a potluck, picnic or barbeque. Also great to pack in a lunch – it keeps well for several days.

Ingredients

  • 1-½ cup Long Grain And Wild Rice (or Any White Rice)
  • 3 cups Vegetable Or Chicken Stock
  • 1 cup Cherry Tomatoes, Finely Diced
  • 1 whole Green, Yellow, Red Or Orange Pepper, Finely Diced
  • 2 whole Green Onions (Scallions), Finely Diced
  • 2 Tablespoons Parsley, Dried
  • ¼ cups Lemon Juice (preferably Freshly Squeezed)
  • ¼ cups Olive Oil
  • ¼ teaspoons Salt
  • ¼ teaspoons Pepper

Preparation

1. Cook rice in vegetable or chicken stock in a covered pot.

2. In a large bowl, combine cooked rice, tomatoes, bell pepper, green onions and parsley.

3. Combine lemon juice, olive oil, salt and pepper and stir into rice/vegetable mixture.

4. Taste and adjust seasonings if needed: if it needs a flavor boost, add more salt or lemon juice; if it tastes too tangy, add more parsley or black pepper.

Refrigerate and serve cold. Enjoy!
