This is a recipe a neighbor passed to my mother about 30 years ago. The color and presentation are so awesome, it’s a very popular picnic/potluck meal. No perishable ingredients means that it’s great to sit out on a hot day, although it’s best served nice and cold!
Combine everything in a giant mixing bowl. Mixing utensils simply don’t do it justice — use your hands!
Chill for 1-2 hours (or overnight) before serving so all the flavors combine well.
Just before serving, give the salad a nice toss since the chopped veggies might sink to the bottom.
