A perfect salad to start a meal with! This recipe is 100% vegan, gluten-free, and dairy-free.
Add dressing ingredients into a small bowl and mix until combined. Set aside.
Remove stems/ribs from kale leaves. Cut leaves into bite-size pieces. Add kale to a bowl and pour dressing over it. Massage kale until it darkens and becomes tender. Set aside.
Julienne carrots and chop onion. Add quinoa, carrots, and onion into a bowl with kale. Sprinkle with a pinch of salt. Toss everything together until combined.
