Description

Hands down the best vinaigrette ever. Perfect for all the healthy eating this month.

Ingredients

  • 2 teaspoons Garlic, Minced
  • 2 teaspoons Shallots, Minced
  • 2 Tablespoons Grainy Dijon Mustard
  • 2 teaspoons Dried Oregano
  • 2 teaspoons Dried Parsley
  • ½ teaspoons Freshly Cracked Black Pepper
  • ½ teaspoons Kosher Salt
  • ¼ cups Red Wine Vinegar
  • 1-¼ cup Extra Virgin Olive Oil
  • 2 Tablespoons Finely Shredded Parmesan Cheese

Preparation

Combine all the ingredients in a mason jar.

Screw the lid on tightly and shake shake shake!

Serve as needed. Keep refrigerated.

I love this just as it is. It is great on salads, or we add a little to Trader’s Joe’s Hodgepodge Vegetables to give a little flavoring to the vegetables.

I added a couple tablespoons of honey to the dressing after I used it the first time on a salad. I though it needed a little sweetness and it seemed to help the overall taste. Otherwise I followed the recipe exactly.
