Grilled Salmon Salad

Description
A tasty, healthy lunch or dinner, made special with artichoke hearts, walnuts, and a peach vinaigrette!
Perfect if you have leftover salmon already grilled.
Ingredients
- 1 ounce, weight Grilled Salmon
- 2 cups Romaine Lettuce, Rinsed, Dried, And Chopped
- ¼ cups Walnuts
- ¼ cups Chopped Red Onion
- ¼ cups Marinated Artichoke Hearts
- 1 Tablespoon Feta Cheese
- 1 Tablespoon Peach Vinegar (red Wine Would Also Work)
- ½ Tablespoons Good Quality Olive Oil
- ½ Tablespoons Fresh Lemon Juice
Preparation
In a medium size bowl, combine salmon, lettuce, walnuts, red onion, artichoke hearts and feta cheese. Top with vinegar, olive oil, and lemon juice, and mix well.
