Description

The flavors in this salad work so well together it immediately became one of my favorites. Grilling the apples brings out the sweetness and adds just the right amount of smokiness that pairs perfectly with the sharpness of the white cheddar, then there’s the roasted pecans with the deliciousness of the sweet and sour vinaigrette, and well, you really need to try it for yourself.

Ingredients

  • FOR THE SALAD:
  • 2 whole Gala Apples, Sliced Across Into 1/4-inch Slices And Drizzled With Olive Oil
  • 1 bag (about 5 Oz. Bag) Mixed Greens And Spinach
  • ⅓ cups Extra Sharp White Cheddar Cheese, Shaved
  • ½ cups Pecans, Whole And Toasted

  • FOR THE VINAIGRETTE:
  • ⅔ cups Extra Virgin Olive Oil
  • ⅔ cups Apple Cider Vinegar
  • 1-½ Tablespoon Dark Brown Sugar
  • 2 whole Green Onions, Minced
  • 3 Tablespoons Basil, Chopped
  • 1 Tablespoon Dijon Mustard
  • ½ teaspoons Ceyenne Pepper
  • ¼ teaspoons Salt

Preparation

To grill apples: Slice apples across into about 1/4 inch slices. (Do not cut in half because you will loose the beautiful star shape on the inside of the galas). Drizzle with olive oil and grill over medium heat 3-4 minutes per side.

For the vinaigrette, just place the olive oil, cider vinegar and remaining ingredients into a blender and mix. You could actually whisk it by hand if you want to.

To assemble the salad, place the greens in a large bowl, top with grilled apple slices, shaved cheddar cheese and toasted pecans. Drizzle with vinaigrette right before serving. ENJOY!
