Description

With a creamy, garlicky, herb-filled dressing, this Green Goddess Pasta Salad is the perfect thing to serve the big crowd at your next summer gathering!

Ingredients

  • 1 pound Rigatoni Pasta
  • 4 ounces, weight Fresh Broccoli, Cut Into Bite-sized Florets
  • 1 cup Mayonnaise
  • ⅓ cups Greek Yogurt (2%)
  • 1 whole Lemon, Zested
  • 2 Tablespoons Fresh Lemon Juice
  • 1 teaspoon Worcestershire Sauce
  • 1 teaspoon Dijon Mustard
  • 1 cup Fresh Basil Leaves
  • ⅓ cups Fresh Parsley Leaves
  • 4 Tablespoons Chopped Fresh Chives
  • 2 Tablespoons Chopped Fresh Dill
  • 1 clove Garlic, Grated
  • 4 ounces, weight Romaine Lettuce, Chopped
  • 4 ounces, weight Asiago Cheese, Cut Into Bite-sized Cubes

Preparation

Cook rigatoni (or your favorite pasta) according to package directions. Drain and place in large bowl. Add broccoli and set aside.

Meanwhile, in a food processor, combine mayonnaise, yogurt, lemon zest, lemon juice, Worcestershire sauce, mustard, basil, parsley, chives, dill, and garlic. Process until smooth.

Pour 1 cup of dressing over the pasta and broccoli and stir to coat. Refrigerate pasta as well as remaining dressing until cool (2–4 hours).

When ready to serve, add lettuce and cheese to the pasta and broccoli. Add remaining dressing (or a portion of it) and stir well to coat. Serve immediately. Enjoy!
