This dressing is straight from the mother of Mother Earth. Alice Waters, that is. It’s creamy like mayo and oh so delicious!
Blend the avocado, anchovy, garlic, vinegar, lemon juice, lime juice, and sugar in a processor until a coarse puree forms. With the machine running, gradually add oil through the feed tube; blend well. Transfer the mixture to a bowl; whisk in cream. Add parsley, tarragon, cilantro, basil, and shallot; whisk to combine. Season dressing to taste with salt and pepper. Cover and chill at least 3 hours (dressing will separate if not chilled). Let stand at room temperature 20 minutes and rewhisk before serving.
Dressing can be made 1 day ahead. Keep chilled.
