Description

Crispy green beans and fresh thyme are the star in this pasta salad.

Ingredients

  • 1 pound Pasta, Such As Gemelli Or Fuscilli
  • 2 cups Fresh Green Beans, Ends Trimmed And Halved
  • 4 Tablespoons Fresh Thyme (Half The Amount If You Are Using Dried)
  • 3 Tablespoons Grated Lemon Rind
  • 2 Tablespoons Shallots, Minced
  • 4 Tablespoons White Wine Vinegar
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 4 cloves Garlic, Finely Minced
  • ⅓ cups Olive Oil
  • Parmesan Cheese For Garnish

Preparation

In a large pot of boiling water, cook pasta according to package directions. During the last 3 minutes of cooking, add the green beans. Drain pasta and green beans.

To make the dressing, combine thyme, lemon rind, shallots, vinegar, salt, pepper and garlic in a bowl. Slowly whisk in the olive oil.

Drizzle the dressing over the pasta and green beans. Stir to combine. Garnish with fresh parmesan cheese. Serve warm or cold.

Oh this is awesome! I just saw Jamie Oliver make something quite similar but it was served hot. I bet this would be amazing cold! Thanks for posting it!

I made this last night and it was WONDERFUL! The flavors were excellent and it was almost all devoured. I followed the recipe exactly and used fresh herbs. I served it warm and loved it that way but will eat the tiny amount left cold with my lunch today. Thanks for sharing this one– I will make this many times.
