Description

Easy and perfect for hot summer nights. Even yummier with grilled chicken, steak or shrimp.

Ingredients

  • ½ cups Extra Virgin Olive Oil
  • ½ cups Feta Cheese
  • 1 whole Lemon, Juiced
  • 1 Tablespoon Plus 1 Teaspoon Red Wine Vinegar
  • 3 cloves Garlic, Peeled
  • ½ teaspoons Salt And Pepper, to taste
  • ½ teaspoons Oregano
  • 5 cups Romaine Lettuce, Rinsed And Chopped
  • ½ whole Cucumber, Peeled And Sliced
  • ¼ whole Small Red Onion, Sliced Thin
  • ¼ cups Grape Tomatoes
  • ¼ cups Artichoke Hearts, Chopped
  • ⅛ cups Kalamata Olives

Preparation

For the dressing:

In a food processor or blender, mix the olive oil, red wine vinegar, lemon juice, garlic, 1/2 the feta cheese, salt, pepper and oregano until will mixed. Set aside.

For the salad:

In a large bowl, mix together the lettuce, cucumber, grape tomatoes, red onion, the rest of the feta cheese, artichoke hearts and kalamata olives. Top with dressing and toss well before serving.

I love a good Greek salad so I had to try this. It is super good! I made it last weekend love it. And this weekend when a big snow was supposed to hit WV, instead of buying bread and milk, I bought the ingredients for this. Yum! I must say it is great to eat when you are snowed in.
