Great Gatsby Salad

Description
My mother got this recipe from a friend and the official title was “Great Gatsby Salad” but everyone in my family calls it “Tina’s Spinach Salad.” (As in, “Tina, can you bring that spinach salad?”) It seems like an odd combination of ingredients, but when mixed together while eating, it’s amazing!
Ingredients
- 1 bag (10 Oz. Size) Baby Spinach
- 1 pound Bacon, Fried Crisp And Chopped
- 6 whole Hard Boiled Eggs, Chopped
- 1 package (16 Oz. Size) Frozen Peas
- 1 whole Sweet Onion, Minced
- Salt And Pepper, to taste
- 1 cup Mayonnaise
- 8 ounces, weight Swiss Cheese, Cubed
Preparation
Put the spinach in the bottom of a bowl. Sprinkle with bacon, then eggs, then peas, then onion in layers on top. Add salt and pepper to taste. Spread mayonnaise on top (no need to really measure the amount, just add enough to cover the top to the edges of the dish). Arrange Swiss cheese on top. Let sit overnight before serving.
