Description

This grapefruit salad is an explosion of flavor and it only takes 15 minutes to make! Grab a knife, cutting board, & measuring cups, and you’re good to go!

Ingredients

  • 2  Grapefruits
  • 5 ounces, weight Arugula
  • ¼ cups Fresh Mint (de-stemmed & Chopped)
  • 2  Avocados (pitted & Diced)
  • ¼ cups Olive Oil
  • 1 Tablespoon Red Wine Vinegar
  • ½ teaspoons Salt
  • ¼ teaspoons Pepper

Preparation

1. Cut grapefruit into segments. Set aside the grapefruit shells to make dressing.

2. Combine grapefruit pieces with arugula, mint and diced avocado in large bowl.

3. Squeeze all the juice from the grapefruit shells into a Pyrex measuring cup or small bowl. Combine grapefruit juice with oil, red wine vinegar, salt & pepper, and stir.
