Description

Delicious potato salad with four ingredients.

Ingredients

  • 32 whole Small Red Or Yellow Potatoes
  • ½ jars (30 Oz. Jar) Mayonnaise, More Or Less To Taste
  • ½ cups Pickle Relish (not Sweet Relish), More Or Less To Taste
  • Paprika To Taste

Preparation

1. Wash and cook the potatoes until soft but not dissolved. Be careful not to overcook the potatoes; you don’t want mashed potatoes. I usually boil or steam four small potatoes per person. If you want, you can cut the potatoes up or skin them. I like them with the skin on. For eight people, that would be thirty-two small red potatoes.

2. Drain the potatoes. You can either let the potatoes cool first or go ahead and mix it together (at my house, it is usually eaten too quickly to cool).

3. Gently fold in enough mayonnaise to coat the potatoes with a little extra. For eight people it would be around a half a jar, give or take.

4. Fold in 1/2 cup of pickle relish. Then taste it. If you think you’d like a little more tartness, add some more relish. When you are adding your relish, put a splash or two or five of paprika. Taste and repeat until you like it. (I usually end up with most of the jar of relish and quite a few shakes of paprika.)
