Description

A fantastic combination of creamy Brie, fresh pear and toasty walnuts, drizzled with blackberry vinaigrette that has a hint of orange!

Ingredients

  • FOR THE VINAIGRETTE:
  • 1 cup Fresh Or Thawed Blackberries
  • 2 teaspoons Honey
  • ¼ cups White Wine Vinegar
  • ½ teaspoons Kosher Salt
  • ¼ teaspoons Fresh Ground Black Pepper
  • 1 pinch Dried Thyme
  • ½ whole Orange, Zest And Juice
  • ¾ cups Extra Virgin Olive Oil
  • FOR THE SALAD:
  • 8 ounces, weight Mixed Salad Greens
  • 2 whole Ripe Pears, Quartered And Sliced Thin
  • 1 whole Pinch Of Kosher Salt
  • 6 ounces, weight Brie (I Used A Brie Log)
  • ⅓ cups Walnuts, Toasted And Chopped

Preparation

Puree the blackberries and then strain them through a wire mesh sieve. Combine the berry puree, honey, vinegar, honey, kosher salt, black pepper, thyme, orange zest and juice in a bowl and whisk while slowly pouring a steady stream of the olive oil. Taste to check seasonings, adjust if needed and set aside.

Divide the greens among plates. Quarter the pears and remove the center core/stem. Slice the pears into thin pieces, arrange on top of the greens and sprinkle with a little kosher salt. Slice brie and scatter evenly. Drizzle with the blackberry vinaigrette and garnish with the toasted walnuts.
