Fresh rucola leaves, mixed with veggies and pieces of creamy, feta cheese. A quick, savory dish that’s also good for you!
Add fresh rucola and cherry tomatoes to a medium bowl.
Cut the feta into cute, uneven chunks and toss them onto the array of healthy veggies.
Combine olive oil, vinegar, sugar, salt, pepper, and pitted black olives in a bowl. Whisk together until combined. Taste and adjust seasonings.
Pour dressing over salad ingredients. Toss with tongs or clean hands. Just before serving, top with additional feta and squeeze a little lemon juice over the top.
