This fig and arugula salad is extremely easy to make, and the unique mix of ingredients create an elegant and vibrant side dish!
Cut the head of radicchio in half, core it, and slice into roughly 1/4-inch pieces. Cut and quarter the figs. Add the radicchio, figs, arugula, and pine nuts to a medium-sized bowl and toss.
Drizzle with olive oil and balsamic vinegar. Add salt and pepper to taste. Delicious with a simple pasta dish!
