Description

This colorful dish makes a tasty and healthy side to any Mexican entree, or stands alone served beside a basket of tortilla chips for dipping!

Ingredients

  • 1 cup Black Beans, Rinsed And Drained (cooked Or Canned)
  • 1 cup Corn Kernels (drained Canned Or Frozen)
  • ⅓ whole Sweet Red Pepper, Chopped
  • 2 whole Green Onions, Chopped
  • 3 Tablespoons Chopped Fresh Cilantro
  • 1 whole Lime, Juiced
  • ¼ teaspoons Salt

Preparation

Combine the black beans, corn, red pepper, onions, and cilantro in a medium bowl. Stir in lime juice and salt, then let sit for at least 1/2 hour before serving.

To kick this up a notch, add seeded chopped jalapeno pepper to taste.
