This colorful dish makes a tasty and healthy side to any Mexican entree, or stands alone served beside a basket of tortilla chips for dipping!
Combine the black beans, corn, red pepper, onions, and cilantro in a medium bowl. Stir in lime juice and salt, then let sit for at least 1/2 hour before serving.
To kick this up a notch, add seeded chopped jalapeno pepper to taste.
