A delicious sweet and tangy compilation of fruit, nuts and spinach that’s easy to throw together for a nice change of pace to the usual salad. My three-year-old daughter calls it “Fancy” Salad and then usually picks and eats all the blue cheese and cherries.
Preheat oven to 375 degrees F (190 degrees C). Arrange walnuts or pecans in a single layer on a baking sheet. Toast in the oven for 5 to 6 minutes, or until nuts begin to brown. Take out and set aside.
In a large bowl, toss together the spinach, walnuts/pecans, cherries, blue cheese, tomatoes, and red onion.
In a small bowl, whisk together jam, vinegar, olive oil, pepper, and salt. Pour over the salad just before serving, and toss to coat.
