Vegan salad with a fat free dressing.
1. Slice the cucumber and the radishes (slice them really thin) and put them into a bowl.
2. Cut the spring onion into slices and add it to the cucumber and radishes.
3. In a small bowl whisk together the dressing ingredients (vinegar, sugar and dill) and pour over the cucumber mix. Let this marinate for at least an hour while mixing it up every now and then.
4. Just before serving add the lamb’s lettuce and mix once more, then serve.
