Cucumber and Tomato Salad
Description
This salad is sweet and hearty. Perfect for all your summer garden veggies.
Ingredients
- 1 pint Cherry Or Grape Tomatoes, Halved
- 1 whole English Cucumber, Chopped
- ½ whole Onion, White Or Red Will Do
- 1 bunch Fresh Parsley, Chopped
- 2 Tablespoons Brown Sugar
- 1 teaspoon Coarse Salt
- ½ teaspoons Black Pepper
- 2 Tablespoons Malt Vinegar
- ¼ cups Olive Oil
Preparation
Place all chopped tomatoes, cucumbers, onion and parsley in a large bowl.
Combine sugar, salt, pepper, vinegar and olive oil in a mason jar with a lid. Shake well.
Pour over vegetables and toss. Serve immediately.
