This is my go-to salad. Sometimes I add quinoa or chickpeas for something a little bit heavier. If you’re not a fan of kale, or haven’t found a way to enjoy it, try this recipe! It will turn kale haters into kale lovers. Kale is high in Vitamin A, K and C. It contains little fat, low calories and is filled with antioxidants.
Put the kale into a mixing bowl. Add the olive oil, sea salt and juice of the lemon. With your hands, massage them all together until kale is fully covered. Add the cranberries and almonds into the mixture and toss to combine.
Tip: This will last 3 days in the fridge.
