Kicking couscous up a notch with some curry and fresh cilantro pesto!
1. In a skillet, heat oil and cook onions over medium heat until soft. Add water as necessary to keep them from sticking and/or burning.
2. In a food processor, combine the onion, cilantro, lime juice, salt, curry paste, and cayenne pepper.
3. Process until smooth, adding water to get a consistency you like.
4. Refrigerate for an hour or two to let the flavors meld, or get impatient and only refrigerate it while you cook the couscous.
5. Cook couscous according to package directions.
6. Mix the cooked couscous with pesto and top with goat cheese.
