Easy and light pasta dish with great flavors for lunch or any meal. It’s quick and ready without heating up the kitchen!
In a boiling pot of water add pasta. Salt and cook per instructions then drain and add pasta into a large bowl. Add butter and parsley, stir and set aside.
In another mixing bowl add diced plums, cucumbers, onion, fresh mint, olive oil, vinegar, salt and pepper to taste, lemon zest and lemon juice. Stir well. Add blue cheese crumbles (optional). Add the drained penne pasta and mix together well.
Cover with plastic wrap and refrigerate 1 hour before serving. Serve cold. It is just delicious. Enjoy!
