A healthy, flavorful, refreshing salad that is perfect on a hot summer day or as a side any time! Very quick and easy to make, and tastes even better the next day.
1. Mix the dressing ingredients in a small bowl. Set aside.
2. Place chickpeas in a medium bowl. Add the rest of the salad ingredients, and mix together.
3. Pour the dressing over the chickpea and veggie mixture.
4. Chill or serve at room temperature.
