You can serve this salad with some fried plantains on the side.
Season chicken breast with grated garlic, adobo seasoning, kosher salt, and freshly ground pepper. Boil chicken breast until fully cooked. Shred and set aside.
In a large bowl, add shredded chicken breast, bell peppers, chopped onions, chopped tomatoes, olives, fresh cilantro, vinegar, lime juice, and chunky salsa. Mix well. Adjust seasoning, and place in the fridge until ready to serve.
