Description

Chewy protein-packed quinoa is paired with sweet cherries, pepper arugula, tangy goat cheese, and crunchy sliced almonds in this satisfying but light summer salad.

Ingredients

  • 2-½ teaspoons Extra Virgin Olive Oil, Divided
  • 1 teaspoon White Wine Vinegar
  • ½ teaspoons Coarse Ground Mustard
  • 1 teaspoon Pure Maple Syrup
  • ⅛ teaspoons Kosher Salt, Or To Taste
  • ½ cups Cooked And Cooled Quinoa
  • ½ cups Pitted And Halved Sweet Red Cherries
  • 1 Tablespoon Crumbled Soft Goat Cheese
  • 2 Tablespoons Sliced Toasted Almonds
  • 1 cup Packed Arugula

Preparation

In a small mixing bowl, whisk together 2 teaspoons olive oil, vinegar, mustard, and maple syrup until emulsified. Season to taste with salt.

Add the quinoa and cherries to the dressing; toss until coated. Fold in the goat cheese and almonds. Separately, toss the arugula with the remaining 1/2 teaspoon olive oil and a pinch of salt.

Plate the dressed arugula and top with the cherry-quinoa mixture. Serve immediately.
