A delicious couscous salad with all the elements of a traditional Caprese.
Heat oven to 400ºF. Once heated, place tomatoes on a baking sheet lined with foil, and drizzle olive oil over top. Liberally sprinkle with salt and roast tomatoes in oven for about 15 minutes.
Meanwhile cook couscous. Place the couscous into the boiling water. Reduce heat to simmer, cover, and let cook 10 minutes or until all liquid is absorbed. Add salt to couscous as it is cooking.
Once couscous is done, add tomatoes, basil and cheese. Stir to combine. Serve immediately.
