This Brussels sprouts salad with cranberry vinaigrette is light, nutritious and packed with healthy super foods. The creamy homemade cranberry orange vinaigrette is the perfect addition to any fall/winter salad.
For the dressing: In a blender combine orange juice through salt and blend until combined. Gradually add the olive oil and blend on low until creamy.
For the salad: Into a serving bowl place chopped Brussels sprouts, cranberries, quinoa and pistachios and top with chia seeds. Pour on some dressing and toss. Enjoy!
