These are a few of my favorite things, plus brown rice. It turns into a tasty rice salad that’s delicious, hearty, filling and not too bad for you.
Using a large mixing bowl, combine the red wine vinegar, olive oil, salt, pepper, garlic powder and hot sauce with a whisk. Whisk until well combined.
Next add your brown rice, olives, bell peppers and any additional veggies you feel like throwing in there (cucumbers, tomatoes, onions, etc.). Mix until well-combined and the dressing is gone.
Refrigerate overnight or for at least 3 hours. Enjoy!
