Bistro Carrot Salad is a mainstay at bistros all over France. Grated carrots and parsley in a lemon vinaigrette. Delicious and very French!
In a large bowl, whisk together olive oil, lemon juice, salt, Dijon mustard, and maple syrup. Add carrots and parsley and toss to combine thoroughly.
