What do you get when you add the earthiness of beets with the tang of dried cherries, the sweetness of candied walnuts and a walnut-shallot dressing? Awesomeness!
First dice your shallot and place in small bowl. Then whisk in the vinegar and two oils. Add salt and pepper to taste.
Drain and rinse the beets and cut into circles, half circles or dice into cubes.
Check your candied walnuts. If they are whole, then feel free to crush them with your hands while still in the bag.
Place a bag of lettuce in a large bowl. Add the sliced beets, crushed walnuts, and the dried cherries. Pour dressing on top and toss!
