Description

Crunchy apples+ soft beets+goat cheese= best side dish.

Ingredients

  • 2 whole Beets
  • ⅓ cups Honey
  • ⅓ cups Apple Cider Vinegar (or Lemon Juice)
  • 1 whole Apple
  • ½ cups Goat Cheese
  • ¼ cups Walnuts

Preparation

1. Bring water to a boil and drop beets into pot.

**You can also do this in the microwave, but make sure the beets are fully covered in a microwave safe bowl with water. Cook for 5 minutes and poke with a fork (then repeat until beets are soft).

2. While beets are cooking, mix together the honey and apple cider vinegar (or lemon juice).

3. Cook beets for 10-12 minutes. Drain and let cool. Then peel and chop into small pieces.

4.Chop apples into bite sized pieces. Crumble or crush walnuts

4. Mix together the beets, the apples, the walnuts, and sprinkle liberally with goat cheese. You can use feta if you want the salad to have a little kick, or chevre (etc) for a milder salad.

This is a delicious recipe! I’m not even a huge beet fan, and I loved it. The only tweaks I made were that I cooked the beets about twice as long, maybe 20-25 minutes (even for small ones), and also I did not use all of the vinegar / honey dressing. Excellent recipe – I’ll definitely make this again!
