Description

This salad recipe was given to me by my wonderful sister-in-law Heather! I give her ALL the credit for this delicious salad! Serve with your favorite tortilla chips too!

Ingredients

  • 2 cups Frozen Corn, Thawed
  • 1 can (15 Oz. Size) Black Beans, Rinsed And Drained
  • 2  Tomatoes, Diced
  • ¼ cups Purple Onion, Finely Chopped
  • 2 Tablespoons Sugar
  • 2 Tablespoons White Vinager
  • 2 Tablespoons Vegetable Oil
  • 3 teaspoons Lime Juice
  • ¼ teaspoons Salt
  • ¼ teaspoons Pepper
  • ¼ teaspoons Ground Cumin
  • 1 Tablespoon Dried Parsley Or Fresh Cilantro
  • 2 cloves Minced Garlic

Preparation

1. In a large bowl combine corn, black beans, tomatoes and purple onion.

2. In a mason jar combine sugar, vinegar, oil, lime juice, salt, pepper, cumin, parsley and minced garlic. Screw on the lid of the jar and shake dressing until sugar is dissolved.

3. Pour dressing over corn mixture. Stir to combine. Allow salad to marinate 1 hour or so to allow the flavors to combine.

4. Serve with your favorite tortilla chips!
