I am not a big fan of mustard/mayonnaise based potato salads, so I came up with my own version. This is now a family favorite and is requested any time we have a get-together! Don’t let the prep time scare you…it’s simply chill time for the baked potatoes!
**I bake my potatoes in the microwave…it’s much faster!
Once the potatoes are well chilled, peel them and cut into cubes.
Combine all remaining ingredients and toss with the cubed potatoes.
Season to taste with more salt and/or pepper. Chill until ready to serve.

I made this with light ingredients. It was delicious! I definitely like it better than mayo heavy versions.

My family liked this one alot. I also used a little bit of ranch salad dressing just because I use that in my twiced baked potatoes and everyone likes the taste. Our local grocery deli makes a baked potato salad that my husband loves but I think everyone agreed this one was better.

I love that this has very little mayo. My family loves potato salad but I can’t stand mayo, so I may just have to try this one!
