Description

A lovely, simple salad dressing from my Aunt Trish.

Ingredients

  • ¾ cups Olive Oil Or Canola Oil
  • Juice Of 2 Lemons
  • 4 Tablespoons Grated Parmesan Cheese
  • ¼ teaspoons Salt, More To Taste
  • Freshly Ground Black Pepper
  • ¼ teaspoons Sugar
  • Dash Of Paprika
  • 1 clove Garlic, Peeled And Left Whole

Preparation

Place all ingredients into a jar. Shake it up and store in the fridge at least 24 hours before serving.

Serve on your favorite green salads. Also works well on pasta salad.

“How good can a salad dressing be?” That’s what I thought before I made this. Now, I’ll give you the answer – Good enough to drink with a straw. Good enough to soak it all up with a piece of bread once your salad is gone. Good enough to find yourself thinking of all the other things you could put it on. I LOVE lemon, and this is fabulous. It’s tangy and fresh and delicious. I also love garlic, so I think I’ll throw in a “bonus clove” next time. Don’t limit your use to just green salads! This would be great on a summer pasta salad, as a marinade for grilled chicken or shrimp, or drizzled over sandwiches in place of boring old mayonnaise or mustard. Thank you, Aunt Trish and Ree! This one is a 5-mitt keeper.

That Aunt Trish was a genius! I don’t think I’ll ever make another salad dressing besides this one. I also did not let mine sit for 24 hours, and it was great, but even better the next day. I had some fresh tomatoes from a local farmer’s market, and just sliced them and topped them with this dressing. So delicious! Thanks for posting this one, Ree.
